Strawberry Cream Cheese Muffins
RHUBARB AND MINT TART RECIPE
This Rhubarb & Mint Tart Recipe features a generous helping of Strawberries, Lemon Cream and Pistachios. It’s the perfect dessert to trick your guests into thinking you’re a gourmet chef.
Rhubarb strawberry filling
2 cups of diced rhubarb, about 10 oz or 2-3 stalks, 2 cups of diced strawberries, about 12 oz, ½ cup sugar, adjust to taste, 1 tablespoons lemon juice
Lemon Cream Filling
1 cup heavy whipping cream, 1 cup lemon curd, store bought or homemade, 2 tablespoons lemon zest
Chill medium sized metal mixing bowl for a few minutes. On high speed, whip heavy whipping cream until soft peaks form then gently fold in lemon curd+lemon zest.
Combine the rhubarb, lemon juice and sugar in a bowl. Mix well and let rest for at least 30 minutes, stirring every once in a while. Add to a pot and bring to boil, dissolving sugars and cooking rhubarb then let cool. Prep pre-cooked tart (store bought or home-made) by filling bottom with the Lemon Cream Filling, layering rhubarb on top. Cut fresh strawberries and layer on top of rhubarb then garnish with mint leaves and pistachios.

Today I’m sharing a fun cocktail recipe, the Blackberry Gin Rickey. This cocktail features gin, fresh lime and beautiful blackberries mixed with fuzzy club soda. It’s a refreshing spin on the classic gin and tonic drink.
Blackberry Gin Rickey Recipe
Ingredients: Blackberries, limes, gin, club soda, ice
Muddle several blackberries in a cocktail shaker.
Add the two tablespoons fresh lime juice, two ounces of gin, and ice. Shake well.
Pour into a highball glass over ice and top with club soda.
Garnish with lime, mint, and blackberries.
GRAPEFRUIT PALOMA COCKTAIL WITH SAGE
This Sage and Grapefruit Paloma cocktail is a refreshing treat in all four seasons. A secret tip to spice this drink up in the fall: burn the sage for an amazing smell to pair with your drink. The Grapefruit Poloma cocktail is also a great drink to make in batches is a pretty glass pitcher for entertaining guests.
Ingredients: Fresh sage, grapefruit, tequila, ice, grapefruit soda
Muddle a slice of pink grapefruit (flesh only, no rind) and several sage leaves in a cocktail shaker.
Add ice and 1.5 ounces of silver tequila into the cocktail strainer, shake well.
Strain shaker contents into a rocks glass with ice.
Fill glass to the top with pink grapefruit soda and garnish with a wedge of grapefruit and sage leaves.
